Loaded Steak Quesadilla Recipe

Ingredients:

  • 1 pound sirloin steak
  • 1 teaspoon chili powder
  • ½ teaspoon red pepper
  • ¼ teaspoon cumin
  • ¼ teaspoon marjoram
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • 4 large tortillas
  • 2 tablespoons taco shredded cheese mix
  • ½ cup cherry tomatoes, sliced
  • ½ cup fire roasted dried corn
  • ½ black bean, rinsed and drained
  • 1 avocado, cubed
  • Lemon juice and chopped coriander for garnish

Preparation:

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together the chili powder, red pepper, cumin, marjoram, garlic powder, onion powder, and salt.
  3. Rub the spice mixture onto the sirloin steak, ensuring it’s evenly coated.
  4. Heat a bit of oil in a frying pan over medium heat. Cook the steak to your desired doneness. Let it rest for a few minutes before slicing it into pieces.
  5. Place two large tortillas on a baking sheet lined with parchment paper. Sprinkle 1/2 cup of the taco cheese mix evenly over each tortilla.
  6. Distribute the sliced steak evenly over the cheese-covered tortillas.
  7. Add the black beans, fire roasted corn, cherry tomatoes, and cubed avocado on top of the steak.
  8. Garnish with a squeeze of lemon juice and a sprinkle of chopped coriander.
  9. Bake in the preheated oven until the tortillas are crispy and the cheese is melted, about 10-12 minutes.
  10. Slice and serve immediately. Enjoy!
