Lemon Blueberry Bread

Ingredients:

  • 1 ½ cups plus 1 tbsp all-purpose flour
  • 2 tsp baking powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup plain yogurt or sour cream
  • ½ tsp salt
  • ½ tsp vanilla extract
  • ½ cup vegetable oil
  • 2 tsp lemon zest
  • 1 ½ cups fresh or frozen blueberries

Lemon Glaze/Syrup:

  • 2 to 3 tbsp lemon juice
  • 1 cup sifted confectioner’s sugar

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease the sides and bottom of a loaf pan with butter or cooking spray.
  2. In a medium bowl, sift together 1 ½ cups of all-purpose flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat together the eggs, granulated sugar, plain yogurt (or sour cream), vanilla extract, vegetable oil, and lemon zest until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. In a separate bowl, toss the blueberries with the remaining 1 tablespoon of flour until coated. Gently fold the blueberries into the batter.
  6. Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer the loaf to a wire rack to cool completely.
  8. While the bread is cooling, prepare the lemon glaze/syrup. In a small saucepan over low heat, combine the lemon juice and sifted confectioner’s sugar. Cook, stirring constantly, until the sugar has dissolved and the mixture has thickened slightly, about 3 minutes.
  9. Using a toothpick or skewer, poke holes all over the top and sides of the cooled loaf. Brush the lemon syrup over the loaf, allowing it to soak in.
  10. Let the glazed bread cool for an additional 15 minutes before slicing and serving. Enjoy!
