Ingredients:

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped chives or green onions
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease with cooking spray.
  2. In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, chopped chives or green onions, all-purpose flour, and eggs. Season with salt and pepper to taste.
