Comforting Sour Cream Beef and Noodle Bake

Ingredients:

  • 12 oz. uncooked egg noodles
  • 1 lb. ground beef
  • 1 yellow onion, finely chopped
  • 2 medium cloves garlic, minced
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) diced tomatoes, drained
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • Red pepper flakes to taste
  • Salt and pepper to taste
  • 8 oz. sour cream
  • 8 oz. small curd cottage cheese
  • 1/2 cup Parmesan cheese, shredded
  • 2 cups cheddar cheese, shredded
  • Fresh parsley, chopped, to garnish

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Boil egg noodles in salted water until al dente, drain, and toss with olive oil.
  3. In a skillet, brown ground beef; drain excess fat. Add onion and garlic, sauté until fragrant.
  4. Stir in tomato sauce, diced tomatoes, Worcestershire sauce, smoked paprika, red pepper, salt, and pepper. Simmer to thicken.
  5. In a bowl, mix sour cream, cottage cheese, Parmesan, and noodles.
  6. Layer in a 9×13 dish: half the noodle mix, half the beef mix, half the cheddar. Repeat.
  7. Bake uncovered for 25-30 minutes until bubbly.
  8. Garnish with parsley and serve.
