Hearty Country-Style Beef and Veggie Soup

Hearty Country-Style Beef and Veggie Soup

Ingredients:

  • 1 pound of beef stew meat, diced
  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 potatoes, peeled and cubed
  • 1 cup of frozen peas
  • 1 cup of frozen corn
  • 1 can (14.5 oz) of diced tomatoes
  • 6 cups of beef broth (ensure halal certification)
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried parsley
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat olive oil over medium-high heat. Add the diced beef and cook until browned on all sides. Remove the beef and set it aside.
  2. In the same pot, add the chopped onion and minced garlic, sautéing until the onion turns translucent.
  3. Return the beef to the pot, along with the carrots, celery, potatoes, peas, corn, diced tomatoes, beef broth, thyme, and parsley.
  4. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 to 1.5 hours, or until the beef is tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, optionally garnished with additional parsley.
