Hearty Country-Style Beef and Veggie Soup
Ingredients:
- 1 pound of beef stew meat, diced
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 potatoes, peeled and cubed
- 1 cup of frozen peas
- 1 cup of frozen corn
- 1 can (14.5 oz) of diced tomatoes
- 6 cups of beef broth (ensure halal certification)
- 1 teaspoon of dried thyme
- 1 teaspoon of dried parsley
- Salt and pepper to taste
Instructions:
- In a large pot, heat olive oil over medium-high heat. Add the diced beef and cook until browned on all sides. Remove the beef and set it aside.
- In the same pot, add the chopped onion and minced garlic, sautéing until the onion turns translucent.
- Return the beef to the pot, along with the carrots, celery, potatoes, peas, corn, diced tomatoes, beef broth, thyme, and parsley.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 to 1.5 hours, or until the beef is tender.
- Season with salt and pepper to taste.
- Serve hot, optionally garnished with additional parsley.
