Exquisite Southern Pineapple Sunshine Cake

Ingredients:
- 2 cups of all-purpose flour
- 2 tsp of baking soda
- 1/2 tsp of salt
- 2 cups of sugar
- 2 eggs
- 1 can (20 oz) of crushed pineapple, with juice
- 1 cup of chopped pecans or walnuts (optional)
- 1 cup of unsweetened shredded coconut (optional)
- 1 tsp of vanilla extract
Frosting Ingredients:
- 1 package (8 oz) of softened cream cheese
- 1/2 cup of softened unsalted butter
- 4 cups of powdered sugar
- 1 tsp of vanilla extract
- Chopped pecans or walnuts, and shredded coconut for topping
Directions:
- Preheat the oven to 350°F (175°C) and generously grease and flour a 9×13 inch baking pan.
- In a large bowl, combine flour, baking soda, and salt, whisking until evenly mixed.
- Incorporate sugar, eggs, and crushed pineapple (with its juice) into the dry mixture, stirring until thoroughly combined.
- Fold in nuts, coconut, and vanilla extract if preferred.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for approximately 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack before frosting.
For the Frosting:
- In a medium bowl, blend the cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar, mixing until a smooth consistency is achieved. Stir in vanilla extract.
- Spread the frosting evenly over the cooled cake.
- Sprinkle with additional nuts and coconut for an extra touch of indulgence, if desired.
