Exquisite Southern Pineapple Sunshine Cake

Ingredients:

  • 2 cups of all-purpose flour
  • 2 tsp of baking soda
  • 1/2 tsp of salt
  • 2 cups of sugar
  • 2 eggs
  • 1 can (20 oz) of crushed pineapple, with juice
  • 1 cup of chopped pecans or walnuts (optional)
  • 1 cup of unsweetened shredded coconut (optional)
  • 1 tsp of vanilla extract

Frosting Ingredients:

  • 1 package (8 oz) of softened cream cheese
  • 1/2 cup of softened unsalted butter
  • 4 cups of powdered sugar
  • 1 tsp of vanilla extract
  • Chopped pecans or walnuts, and shredded coconut for topping

Directions:

  1. Preheat the oven to 350°F (175°C) and generously grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine flour, baking soda, and salt, whisking until evenly mixed.
  3. Incorporate sugar, eggs, and crushed pineapple (with its juice) into the dry mixture, stirring until thoroughly combined.
  4. Fold in nuts, coconut, and vanilla extract if preferred.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
  6. Bake for approximately 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely in the pan on a wire rack before frosting.

For the Frosting:

  1. In a medium bowl, blend the cream cheese and butter until smooth and creamy.
  2. Gradually add powdered sugar, mixing until a smooth consistency is achieved. Stir in vanilla extract.
  3. Spread the frosting evenly over the cooled cake.
  4. Sprinkle with additional nuts and coconut for an extra touch of indulgence, if desired.
