Delicious Mexican Casserole Recipe
Ingredients:
- 1 pound of lean ground beef
- 1 can of Ranch Style beans
- 1 10-12 ounce bag of tortilla chips, crushed (adjust amount to preference)
- 1 can of Ro-tel tomatoes
- 1 small onion, finely chopped
- 2 cups of shredded cheddar cheese, divided
- 1 package of taco seasoning
- 1 can of cream of chicken soup
- 1/2 cup of water
- Sour cream and salsa for serving
Directions:
- Preheat your oven to 325 degrees Fahrenheit.
- In a large skillet, brown the ground beef over medium heat until cooked through. Drain off any excess fat.
- Stir in the Ranch Style beans, Ro-tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water. Allow the mixture to simmer over medium-low heat until everything is well combined and heated through.
- Grease a 9×13 casserole dish with cooking spray.
- Spread a layer of crushed tortilla chips evenly on the bottom of the casserole dish.
- Spoon half of the meat and bean mixture over the layer of tortilla chips.
- Sprinkle half of the shredded cheddar cheese on top of the meat mixture.
- Repeat the layers with the remaining crushed tortilla chips, meat and bean mixture, and shredded cheddar cheese.
- Cover the casserole dish with aluminum foil and bake in the preheated oven for 20-30 minutes, or until the cheese is melted and bubbly.
- Allow the casserole to sit for 5-10 minutes before serving.
- Serve hot, topped with a dollop of sour cream and salsa on the side.
