Delicious Hawaiian Slow Cooker Chicken
Ingredients:
- 2 pounds boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 1/2 cup ketchup
- 1 tablespoon fresh grated ginger
- 2 cloves garlic, minced
- 1 bell pepper, finely chopped
- 1 cup pineapple chunks
- Salt and pepper to taste
- Optional for thickening: 2 tablespoons cornstarch, 2 tablespoons water
Directions:
- Season chicken breasts with salt and pepper, then place them in the slow cooker.
- In a medium bowl, whisk together pineapple juice, brown sugar, soy sauce, ketchup, ginger, and garlic. Pour the mixture over the chicken in the slow cooker.
- Add the chopped bell pepper and pineapple chunks to the slow cooker.
- Cover and cook on low for 6 hours or on high for 3 hours until the chicken is tender and fully cooked.
- For a thicker sauce, mix cornstarch and water in a small bowl. Stir this mixture into the slow cooker during the last 30 minutes of cooking.
- Serve the chicken hot, garnished with additional pineapple chunks and bell pepper if desired.
