DELICIOUS FRESH PEACH COBBLER
Delicious Fresh Peach Cobbler
Ingredients:
For the Filling:
- 8 large fresh peaches, peeled, pitted, and sliced
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 tsp lemon juice
- 2 tsp corn starch
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
For the Topping:
- 1 1/2 cups all-purpose flour
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 stick Earth Balance® butter, cut into small pieces
- 1/3 cup boiling water
Additional Topping:
- 4 tsp organic sugar
- 1 1/2 tsp cinnamon
Instructions:
- Preheat the oven to 425°F (220°C).
- Peel, pit, and slice the peaches, then place them in a large mixing bowl.
- Sprinkle the brown sugar, sugar, cinnamon, corn starch, lemon juice, and nutmeg over the peaches. Stir until the peaches are evenly coated.
- Pour the peach mixture into an ungreased 9×13-inch baking dish.
- Bake for 10 minutes, then remove from the oven.
- In a medium mixing bowl, whisk together the flour, sugar, brown sugar, baking powder, and salt.
- Using a pastry blender, cut the butter into the flour mixture until it resembles coarse crumbs.
- Pour the boiling water into the flour mixture and stir until well combined.
- Spoon the topping mixture over the peaches, spreading it gently to cover them evenly.
- In a small bowl, mix together the organic sugar and cinnamon, then sprinkle it over the cobbler.
- Bake for approximately 35 minutes, or until the topping is golden brown.
- Serve warm, optionally topped with dairy-free vanilla ice cream or your favorite ice cream flavor. Enjoy!
