Delicious Fresh Peach Cobbler

Ingredients:

For the Filling:

  • 8 large fresh peaches, peeled, pitted, and sliced
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

For the Topping:

  • 1 1/2 cups all-purpose flour
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance® butter, cut into small pieces
  • 1/3 cup boiling water

Additional Topping:

  • 4 tsp organic sugar
  • 1 1/2 tsp cinnamon

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Peel, pit, and slice the peaches, then place them in a large mixing bowl.
  3. Sprinkle the brown sugar, sugar, cinnamon, corn starch, lemon juice, and nutmeg over the peaches. Stir until the peaches are evenly coated.
  4. Pour the peach mixture into an ungreased 9×13-inch baking dish.
  5. Bake for 10 minutes, then remove from the oven.
  6. In a medium mixing bowl, whisk together the flour, sugar, brown sugar, baking powder, and salt.
  7. Using a pastry blender, cut the butter into the flour mixture until it resembles coarse crumbs.
  8. Pour the boiling water into the flour mixture and stir until well combined.
  9. Spoon the topping mixture over the peaches, spreading it gently to cover them evenly.
  10. In a small bowl, mix together the organic sugar and cinnamon, then sprinkle it over the cobbler.
  11. Bake for approximately 35 minutes, or until the topping is golden brown.
  12. Serve warm, optionally topped with dairy-free vanilla ice cream or your favorite ice cream flavor. Enjoy!
