Delicious Blackberry Cobbler Recipe

Ingredients:

  • 21 oz can of blackberry filling (or fresh blackberries if preferred)
  • 1½ cups of all-purpose flour
  • ⅓ cup of brown sugar
  • ⅓ cup of granulated sugar
  • 1½ tsp of baking powder
  • ½ tsp of salt
  • ½ cup of unsalted butter, cubed and chilled
  • ⅓ cup of boiling water
  • 1 tbsp of coarse sugar (for sprinkling on top)

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, and salt until well combined.
  3. Add the chilled butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.
  4. Pour the boiling water over the mixture and stir until a soft dough forms. Be careful not to overmix.
  5. Spread the blackberry filling evenly in the bottom of the prepared baking dish. If using fresh blackberries, sprinkle them with a little sugar before adding them to the dish.
  6. Drop spoonfuls of the dough over the blackberry filling, spreading it out slightly with the back of the spoon. It’s okay if the dough is not perfectly even.
  7. Sprinkle the coarse sugar over the top of the dough for a sweet and crunchy finish.
  8. Bake the cobbler in the preheated oven for 35 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Allow the cobbler to cool for a few minutes before serving. Serve it warm on its own or with a scoop of vanilla ice cream for an extra special treat.
