Ingredients:

  • 2-3 lb pork loin roast
  • 1 onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • ½ cup dark brown sugar
  • ¾ cup apple cider vinegar
  • ½ cup honey
  • ¼ cup soy sauce
  • 2 tsp salt
  • 3 cloves garlic, minced
  • 2 cups fresh pineapple chunks
  • Optional: 1 tsp crushed red pepper flakes

Instructions:

  1. In a skillet, brown the pork loin roast in olive oil until golden.
  2. Transfer the browned roast to a slow cooker, surrounding it with the sliced onion.
  3. In a mixing bowl, combine apple cider vinegar, soy sauce, honey, brown sugar, minced garlic, salt, and optional crushed red pepper flakes to create a flavorful marinade.
  4. Pour the marinade over the pork and onions in the slow cooker.
  5. Arrange pineapple chunks around the roast.
  6. Cook on low for 6-8 hours or on high for 4-5 hours until the pork is tender and succulent.
  7. Optionally, thicken the sauce with a cornstarch slurry for a richer texture.
