Crispy Fried Chicken Gizzards

Ingredients:

  • 1 pound chicken gizzards
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Instructions:

  1. Begin by preparing the chicken gizzards. Remove any excess fat or membranes, then rinse them under cold water and pat dry with paper towels.
  2. Place the cleaned gizzards in a bowl and pour buttermilk over them, ensuring all pieces are well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to tenderize the gizzards.
  3. In a separate bowl, combine flour, salt, paprika, garlic powder, onion powder, and black pepper to create a seasoned flour mixture. Mix well.
  4. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
  5. Remove the marinated gizzards from the buttermilk, allowing excess to drip off.
  6. Coat each gizzard with the seasoned flour mixture, pressing the flour into the gizzards for thorough coating.
  7. Using a slotted spoon or tongs, remove the fried gizzards from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. Repeat the frying process with the remaining coated gizzards.
  9. Serve the crispy fried chicken gizzards hot as a main dish or as a delicious side alongside soul food favorites like collard greens, mac and cheese, or cornbread.
