Creamy Cajun Chicken Pasta

Creamy Cajun Chicken Pasta

Ingredients:

  • 8 ounces rotini pasta
  • Olive oil
  • 2 tablespoons unsalted butter
  • Chicken breast
  • Cajun seasoning
  • 4 cloves garlic, minced
  • 1/4 cup minced onion
  • 1/2 cup tomato sauce
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • Freshly squeezed lemon juice
  • 2 tablespoons chopped fresh parsley leaves
  • Salt and black pepper, to taste
  • 1/2 cup Parmesan cheese

Instructions:

  1. While the pasta is cooking, heat the extra virgin olive oil in a large skillet over medium heat.
  2. Cut the chicken breast into butterfly cuts and season both sides with 1 tablespoon of Cajun seasoning. Add the seasoned chicken to the skillet and cook for about three minutes on each side, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. Remove the chicken from the skillet and set it aside.
  3. In the same skillet over medium heat, melt the butter. Add the minced garlic and onion, and sauté for about 30 seconds until fragrant.
  4. Stir in the tomato sauce and cook for a few minutes. Then, pour in the heavy cream and chicken broth. Cook until the sauce thickens slightly.
  5. Add more Cajun seasoning to taste and a squeeze of fresh lemon juice. Stir in the Parmesan cheese until melted and well combined. Reserve some sauce to drizzle over the chicken later.
  6. Once the pasta is cooked, drain it and add it to the skillet with the sauce. Toss to coat the pasta evenly with the sauce. Stir in the chopped parsley leaves.
  7. Season the pasta with salt and black pepper to taste.
  8. To serve, place the cooked chicken on top of the pasta and drizzle with the reserved sauce. Garnish with additional chopped parsley if desired.
  9. Serve immediately and enjoy your creamy Cajun chicken pasta!
