Cinnamon Banana Bread Muffins
Ingredients:
- 1/3 cup granulated sugar
- 1 teaspoon ground cinnamon
- 2/3 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 1/2 cups mashed ripe bananas (about 3 bananas)
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
- Preheat Oven: Preheat your oven to 375°F. Line a muffin tin with paper liners or grease with non-stick cooking spray.
- Prepare Cinnamon Sugar Mixture: In a small bowl, combine the granulated sugar and ground cinnamon. Set aside.
- Mix Wet Ingredients: In a large mixing bowl, cream together the brown sugar and softened butter until light and fluffy. Add the eggs, mashed bananas, milk, and vanilla extract. Mix until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fill Muffin Cups: Fill each muffin cup about two-thirds full with the batter.
- Add Cinnamon Sugar Topping: Sprinkle the cinnamon sugar mixture evenly over the tops of the muffins.
- Bake: Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
