Carrot Cake Loaf

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped pecans (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In a large bowl, whisk sugar, oil, eggs, and vanilla until well blended.
  4. Gradually mix in the dry ingredients until just combined.
  5. Fold in grated carrots and chopped pecans.
  6. Pour the batter into the prepared pan, smoothing the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Cooking Time: 60 minutes

Total Time: 75 minutes
