Carrot Cake Loaf
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups grated carrots
- 1/2 cup chopped pecans (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
- In a large bowl, whisk sugar, oil, eggs, and vanilla until well blended.
- Gradually mix in the dry ingredients until just combined.
- Fold in grated carrots and chopped pecans.
- Pour the batter into the prepared pan, smoothing the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
