Ingredients:

  • 8-10 sheets of spring roll wrappers
  • 1 egg (for sealing)
  • 150 grams minced pork
  • 150 grams cabbage
  • 50 grams soy noodles
  • 4 dried shiitake mushrooms
  • 25 grams chives
  • 1 carrot
  • 2 cloves garlic
  • 1 piece ginger
  • 1 tablespoon light soy sauce
  • 1 teaspoon sugar
  • Pinch of white pepper powder
  • Oil for frying

Instructions:

  1. Prepare the Ingredients:
    • Hydrate the soy noodles for 30 minutes and soak the dried shiitake mushrooms for 15 minutes. Chop garlic and ginger finely. Slice cabbage, spring onions, and carrot thinly. Drain and cut the shiitake mushrooms and soy noodles.
  2. Cook the Filling:
    • Heat vegetable oil in a frying pan over high heat. Fry garlic and ginger until fragrant. Add shiitake mushrooms and sauté for a minute. Then, add spring onions and sauté for another minute. Reduce heat and add minced pork.
    • Once the pork is cooked, add carrot, cabbage, soy noodles, light soy sauce, sugar, and white pepper. Sauté for about 5 minutes until well combined. Transfer to a bowl and let it cool completely.
  3. Assemble the Spring Rolls:
    • Lay out the spring roll wrappers on a flat surface. Spoon the filling onto each wrapper. Roll up halfway, fold the ends inward, and continue rolling. Seal the ends with beaten egg.
  4. Fry the Spring Rolls:
    • Heat vegetable oil in a deep frying pan over medium heat. Carefully add the spring rolls and fry until they are golden brown and crispy, about 5 minutes. Ensure to flip them occasionally for even cooking.
    • Once done, transfer the fried spring rolls to a rack or paper towels to drain excess oil.
