Ingredients:

  • 3 apples, cut into wedges
  • For the Dough:
    • 150 g (3/4 cup) sugar
    • 220 g butter
    • 340 g (1 cup) honey
    • 180 ml (3/4 cup) buttermilk
    • 3 eggs
    • 1 teaspoon vanilla extract
    • 300 g (2 1/2 cups) flour
    • 2 teaspoons salt
    • 1 teaspoon cinnamon
    • 1 teaspoon nutmeg
    • 10 g baking powder
  • For the Caramel:
    • 100 g (1/2 cup) sugar
    • 3 tablespoons water

Preparation:

  1. Prepare the Caramel:

    Add the sugar and water to a saucepan. Caramelize over medium heat until amber in color. Pour caramel into a pie dish, covering the bottom evenly.

  2. Prepare the Dough:

    In another saucepan, melt butter over medium heat until golden brown. Remove from heat and stir in honey, buttermilk, eggs, sugar, and vanilla extract until well combined.

  3. Combine Dry Ingredients:

    In a large bowl, whisk together flour, salt, cinnamon, nutmeg, and baking powder.

  4. Mix and Assemble:

    Pour the butter mixture into the bowl of dry ingredients. Stir until a smooth batter forms.

  5. Assemble the Pie:

    Arrange apple wedges over the caramel in the pie dish. Pour the batter evenly over the apples and caramel.

  6. Bake:

    Preheat the oven to 170°C (340°F). Bake the pie for about 1 hour, or until the crust is golden brown and the filling is set.

  7. Cool and Serve:

    Allow the pie to cool in the dish for 15 minutes. Serve warm, optionally with a scoop of vanilla ice cream.
