Pan-roasted Sea Bass with Garlic Butter

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Season Sea Bass: Pat the sea bass fillets dry with paper towels. Season both sides of each fillet generously with kosher salt and freshly ground black pepper.
- Heat Olive Oil: In a large oven-safe skillet, heat olive oil over medium-high heat until shimmering.
- Sear Sea Bass: Once the oil is hot, carefully add the sea bass fillets to the skillet, skin-side down. Sear the fillets for 3-4 minutes, without moving them, until the skin is crispy and golden brown.
- Flip and Transfer: Using a spatula, carefully flip the sea bass fillets over. Transfer the skillet to the preheated oven.
- Roast Sea Bass: Allow the sea bass to roast in the oven for 6-8 minutes, or until the fish is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Prepare Garlic Butter: While the sea bass is roasting, prepare the garlic butter. Mince the clove of garlic finely. In a small saucepan, melt the unsalted butter over medium heat. Once melted, add the minced garlic to the butter and cook for 1-2 minutes, or until fragrant. Season with a pinch of kosher salt to taste.
- Serve: Remove the sea bass from the oven and transfer to serving plates. Spoon the garlic butter over the top of each fillet. Serve the pan-roasted sea bass immediately, accompanied by your favorite sides. Enjoy the succulent fish with its crispy skin and flavorful garlic butter!
