Potato Pancakes Recipe
Ingredients:
- 4 cups cold mashed potatoes
- 5 slices of bacon
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, well beaten
- 1/2 cup shredded cheddar cheese
Instructions:
- In a large skillet over medium-high heat, cook the bacon slices until evenly browned and crisp, turning occasionally, for about 10 minutes.
- Remove the cooked bacon slices, crumble them, and set aside, leaving the bacon drippings in the skillet.
- In a mixing bowl, combine the mashed potatoes, beaten eggs, onion powder, salt, and black pepper.
- Stir in the crumbled bacon and shredded cheddar cheese into the potato mixture until well incorporated.
- Shape the mixture into 8 patties.
- Heat the bacon drippings in the skillet over medium heat.
- Pan-fry the potato patties in the bacon drippings until crisp on each side, approximately 4 minutes per side.
