Potato Pancakes Recipe

Ingredients:

  • 4 cups cold mashed potatoes
  • 5 slices of bacon
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, well beaten
  • 1/2 cup shredded cheddar cheese

Instructions:

  1. In a large skillet over medium-high heat, cook the bacon slices until evenly browned and crisp, turning occasionally, for about 10 minutes.
  2. Remove the cooked bacon slices, crumble them, and set aside, leaving the bacon drippings in the skillet.
  3. In a mixing bowl, combine the mashed potatoes, beaten eggs, onion powder, salt, and black pepper.
  4. Stir in the crumbled bacon and shredded cheddar cheese into the potato mixture until well incorporated.
  5. Shape the mixture into 8 patties.
  6. Heat the bacon drippings in the skillet over medium heat.
  7. Pan-fry the potato patties in the bacon drippings until crisp on each side, approximately 4 minutes per side.
