Authentic Mexican Crispy Tacos

Ingredients:

  • 12 corn tortillas
  • 2 cups cooked shredded chicken
  • 1 cup refried beans
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup crumbled queso fresco
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • Oil for frying
  • Salt to taste

Instructions:

  1. Warm the tortillas on a skillet until pliable.
  2. Spread a tablespoon of refried beans evenly onto each tortilla.
  3. Layer shredded chicken on top of the beans.
  4. Roll the tortillas tightly and secure them with toothpicks.
  5. Heat oil in a deep fryer or large skillet to 350°F (175°C).
  6. Fry the tacos until they turn golden brown, approximately 2-3 minutes per side.
  7. Drain the tacos on paper towels and remove the toothpicks.
  8. Serve the tacos topped with lettuce, tomatoes, queso fresco, sour cream, and salsa.
