Ingredients:
- 1 pound of fresh green beans, trimmed and halved
- 2 tablespoons of butter
- 2 cloves of garlic, minced
- 1/4 cup of all-purpose flour
- 1 1/2 cups of chicken or vegetable broth
- 1 cup of milk (whole, 2%, or almond milk)
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 1 cup of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of breadcrumbs
- 2 tablespoons of chopped fresh parsley (optional, for garnish)
Instructions:
- Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish with non-stick cooking spray.
- Bring a large pot of salted water to a boil. Add the green beans and cook for about 5 minutes until they are crisp-tender. Drain and transfer to a bowl of ice water to halt the cooking process. Drain again and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Stir in the flour and cook for an additional minute, stirring constantly.
- Gradually whisk in the chicken or vegetable broth and milk, stirring until smooth. Cook for 3-5 minutes until the mixture thickens.
- Stir in the dried thyme, salt, and pepper to taste.
- Remove the skillet from the heat and stir in the shredded mozzarella cheese until melted and smooth.
- Add the cooked green beans to the skillet and toss until evenly coated with the cheese sauce.
- Transfer the green bean mixture to the prepared baking dish and spread evenly.
- In a small bowl, combine the grated Parmesan cheese and breadcrumbs. Sprinkle the breadcrumb mixture evenly over the top of the green beans.
- Bake the casserole in the preheated oven for 20-25 minutes until the breadcrumbs are golden brown and the casserole is bubbly.
