Lemon-Enhanced Seafood Feast
Ingredients:
- 3 lemons (divided)
- 1/2 cup Old Bay seasoning, plus extra for topping
- 8 cloves of garlic, crushed
- 1 onion, peeled and sliced into 6 pieces
- 1 pound of petite Yukon gold potatoes, halved
- 2 pounds of assorted seafood (shrimp, crab legs, clams, and mussels)
- 4 ears of corn, halved
- 1/4 cup unsalted butter, melted
- Fresh parsley, chopped, for garnish
Instructions:
- In a large pot, pour 4 quarts of water. Squeeze the juice from 2 lemons into the water and then add the squeezed lemon halves to the pot.
- Stir in the Old Bay seasoning, crushed garlic, and sliced onion. Bring to a vigorous boil over high heat.
- Introduce the halved potatoes into the pot and cook for 10 minutes.
- Follow by adding the halved corn and cook for an additional 5 minutes.
- Include the assorted seafood into the pot and cook until fully done; roughly 4-5 minutes for shrimp and 5-7 minutes for crab legs, clams, and mussels.
- Drain the cooked seafood feast and transfer it to a generously sized serving platter. Drizzle with the melted butter and garnish with chopped parsley and slices of the remaining lemon.
- For an added burst of flavor, sprinkle some extra Old Bay seasoning over the top.
