Professional Banana Cake Recipe

Ingredients:

  • 3 ripe bananas
  • 2 cups of all-purpose flour
  • 3 large eggs
  • 1 cup of granulated sugar
  • 1/2 cup of milk
  • 1/2 cup of vegetable oil
  • 1 tablespoon of baking powder
  • 1 tablespoon of vanilla extract
  • 3 tablespoons of cocoa powder
  • 3 cups of whole milk
  • 3 tablespoons of cornstarch
  • 3 tablespoons of all-purpose flour
  • 1 tablespoon of butter
  • 1/2 cup of granulated sugar
  • 80g of chocolate
  • 200ml of heavy whipping cream
  • 1 cup of cold milk

Preparation:

  1. Begin by preheating your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add the eggs and granulated sugar, then beat until well combined. Stir in the milk, vegetable oil, and vanilla extract.
  3. In a separate bowl, sift together the all-purpose flour, cocoa powder, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Pour the batter into the prepared cake pan and bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before proceeding.
  5. While the cake is cooling, prepare the custard filling. In a saucepan, whisk together the whole milk, cornstarch, all-purpose flour, and granulated sugar over medium heat. Cook, stirring constantly, until the mixture thickens into a custard-like consistency.
  6. Remove the custard from the heat and stir in the butter and vanilla extract until smooth. Allow the custard to cool completely.
  7. Once the cake and custard are cooled, use a sharp knife to gently cut the top off the cake, creating a flat surface. Place the cake on a serving plate.
  8. Spread the cooled custard evenly over the top of the cake.
  9. In a separate bowl, whip the heavy whipping cream until stiff peaks form. Fold in the cold milk until combined.
  10. Spread the whipped cream mixture over the custard layer.
  11. Finally, grate the chocolate over the top of the cake for decoration.
  12. Chill the cake in the refrigerator for at least 1 hour before serving. Enjoy your delicious banana cake!
