Deluxe Beef Lombardi Casserole

Deluxe Beef Lombardi Casserole

Ingredients:

  • 1 pound of lean ground beef
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 can (14.5 ounces) of diced tomatoes
  • 1 can (8 ounces) of tomato sauce
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and freshly ground black pepper, to taste
  • 8 ounces of egg noodles, cooked according to package instructions
  • 1 cup of sour cream
  • 1 cup of shredded cheddar cheese
  • 1 cup of shredded mozzarella cheese
  • 1/4 cup of grated Parmesan cheese

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef until browned. Add the chopped onion and minced garlic, cooking until the onion becomes translucent.
  3. Stir in the diced tomatoes (including juices), tomato sauce, dried oregano, dried basil, salt, and pepper. Allow the mixture to simmer for about 10 minutes, stirring occasionally to blend the flavors.
  4. Layer half of the cooked egg noodles on the bottom of the prepared baking dish. Spread half of the beef mixture evenly over the noodles.
  5. Dollop half of the sour cream over the beef layer, followed by half of the cheddar and mozzarella cheeses.
  6. Repeat the layers with the remaining noodles, beef mixture, sour cream, and cheeses.
  7. Sprinkle the grated Parmesan cheese evenly over the top of the casserole.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Allow the casserole to cool slightly before serving. Enjoy this indulgent Beef Lombardi casserole with your favorite sides or a crisp green salad.
