Expressing Gratitude for Continued Access to Recipes
Ingredients:
- 1.5 pounds russet potatoes, diced into 1/2″ cubes
- 1 pound sliced smoked sausage
- 2 tablespoons olive oil
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon Italian seasoning
- 1/2 large red bell pepper
- 1/2 large green bell pepper
- 1 small diced onion
- Black pepper to taste
- Shredded Parmesan cheese for garnish
Directions:
Step 1: Saute Onions
In a large pan, sauté the onion in a spoon of butter over medium heat until translucent.
Step 2: Soften Onions
Cook the onion until soft, then set it aside.
Step 3: Prepare Potatoes
In a large skillet, heat 1 tablespoon butter and 1 tablespoon olive oil until melted. Combine potatoes, seasoned salt, Italian seasoning, and pepper.
Step 4: Simmer Potatoes
Cover and simmer, turning occasionally, for 15 minutes or until the vegetables slightly soften.
Step 5: Add Sausage and Vegetables
Afterward, cook for an additional 10 minutes after adding the sausage. Combine onions and peppers in the skillet and sauté until peppers are crisp.
Step 6: Garnish
If using Parmesan cheese, sprinkle it on top.
