Ingredients:
- 11.2 kg prime non-fat sirloin steak
- Generous bunch of flat-leaf parsley
- 3 shallots
- 3 celery leaves
- 2 tbsp + 1 tsp dried oregano
- 2 tbsp coffee thyme
- 2 tbsp + 1 tbsp cracked black pepper
- 4 tbsp olive oil
- Salt
Preparation:
- Allow the meat to reach room temperature by taking it out of the refrigerator 30 minutes beforehand.
- Preheat the oven to th. 8 (240 °C) for 15 minutes; it should be extremely hot when you introduce the meat.
- In a bowl, mix parsley, shallots, celery, oregano, thyme, and pepper with olive oil. Season with salt and pepper, then coat the meat with this flavorful mixture.
- Place the sirloin on a wire rack above a drip pan in the preheated oven.
- Cook for 20 minutes (or 5 minutes per pound). Turn off the oven and let it rest for 2 hours without opening the door. This unique cooking method ensures a caramelized exterior and a tender, pink, and juicy interior for large cuts. If the meat isn’t sufficiently hot after 2 hours, reheat for an additional 10 minutes at 240 °C without altering the cooking process.
