Make These Delectable Garlic Flatbreads in 10 Minutes
Ingredients:
- 2 cups (250g) strong white bread flour, plus extra for kneading
- 1 teaspoon salt
- 1 teaspoon fast-acting instant yeast
- 1 tablespoon softened butter
- 2 tablespoons Greek yogurt
- 150 ml cool water
- 2 tablespoons melted butter
- 2 teaspoons garlic puree
- 2-3 teaspoons chopped coriander (cilantro)
- Olive oil for frying
Instructions:
- In a large bowl, combine flour, salt, and yeast. Add softened butter, Greek yogurt, and most of the water. Stir until a soft, slightly sticky dough forms, adding more water if necessary.
- Use your hands to finish kneading the dough on a lightly floured surface for 5-10 minutes until it becomes smooth, stretchy, and pliable.
- Lightly oil a large bowl, place the dough in it, cover with a tea towel, and let it rise until doubled in size (approximately a couple of hours, depending on room temperature).
- Tip the dough onto a floured surface, fold it inward to expel air, and divide it into six equal pieces.
- Roll each piece into a 4.5-5-inch diameter circle and place them on a baking tray lined with parchment paper. Let them relax for 30-45 minutes, allowing the flatbreads to rise again.
- Combine melted butter, garlic puree, and chopped coriander in a small bowl. Set aside.
- Heat a drizzle of olive oil in a pan over medium-high heat. Peel each flatbread from the paper and fry for 3-4 minutes on each side until golden brown and puffed up (you can fry two at a time). Brush with the garlic and coriander butter before serving.
