Indulgent Sour Cream Beef and Noodle Casserole
Comforting Sour Cream Beef and Noodle Bake
Ingredients:
- 12 oz. uncooked egg noodles
- 1 lb. ground beef
- 1 yellow onion, finely chopped
- 2 medium cloves garlic, minced
- 1 can (15 oz.) tomato sauce
- 1 can (15 oz.) diced tomatoes, drained
- 1 tablespoon Worcestershire sauce
- 2 teaspoons smoked paprika
- Red pepper flakes to taste
- Salt and pepper to taste
- 8 oz. sour cream
- 8 oz. small curd cottage cheese
- 1/2 cup Parmesan cheese, shredded
- 2 cups cheddar cheese, shredded
- Fresh parsley, chopped, to garnish
Instructions:
- Preheat oven to 350°F (175°C).
- Boil egg noodles in salted water until al dente, drain, and toss with olive oil.
- In a skillet, brown ground beef; drain excess fat. Add onion and garlic, sauté until fragrant.
- Stir in tomato sauce, diced tomatoes, Worcestershire sauce, smoked paprika, red pepper, salt, and pepper. Simmer to thicken.
- In a bowl, mix sour cream, cottage cheese, Parmesan, and noodles.
- Layer in a 9×13 dish: half the noodle mix, half the beef mix, half the cheddar. Repeat.
- Bake uncovered for 25-30 minutes until bubbly.
- Garnish with parsley and serve.
